RESERVATIONWater is the source of life. Yukawatan's cuisine is born from the natural blessings nurtured by water, such as river fish that live in clear streams, deer and wild boar that run through the forests in search of water, and ducks that gather near the water's edge.
The concept is "Gibier of Water".
Located in landlocked Shinshu, Yukawatan focuses on river fish.
Iwana trout, trout, sweetfish, yamame trout, carp...Enjoy a delicate, light and elegant dish.
Yukawatan's courses are created jointly by the chef and the guest.
Based around a minimalist seven-course menu carefully selected by the chef that changes with the seasons, guests can choose additional dishes to suit their mood and physical condition that day.
Yukawatan's unique "Minimalist Gastronomy Style" allows guests to enjoy the pleasure of choosing dishes such as the specialty trout meunière or a seasonal dish.
